The 24-year-old staff member was near the blast and suffered severe burns to his arms, face and chest and fell into a coma.
He has since died from his injuries.
The cause of the explosion is believed to have been a cleaning agent that spilled on the floor that ignited when a dishwasher was turned on.
“A flammable liquid was placed to clean the bar and travel the length of the bar, so the fire explosion was around the length of the bar, which was a major fire,” he said. say NSW Fire and Rescue Superintendent Andrew Shurety.
